Homemade Chicken Burrito Bowl

Here is what you will need:

Chicken:

garlic powder

onion powder

salt and pepper to taste

paprika to taste

Vegetable oil

Pan


Cilantro Lime Rice:

1 cup of basmati rice

2 cups of water

1 tablespoon vegetable oil

salt to taste

cilantro

1/2 lime

pot


Pinto beans/ Black beans or both!

1 can

microwave or heat up on the stove


Homemade Salsa:

Corn

diced tomatoes

cilantro

lemon

diced red onions


Guacamole:

1-2 Avocados

lime to taste

salt and pepper to taste

diced tomatoes

cilantro

diced Red onions

potato masher

Bowl


Veggies:

Green, Red and yellow peppers

chopped onions

vegetable oil

pan


Directions:

1- Pat dry the chicken with a paper towel

2- Add the olive on both sides and the seasoning

3- Fry in a pan while flipping both sides till it is cooked from inside

4- Remove and let it cool down then dice them

5- For the guac, add the avocados, salt, pepper in to a bowl and mash them with the potato masher. Then add the diced tomatoes, cilantro, red onions and lime and mix well and refrigerate.

6- For the salsa: add the corn, tomatoes, onions, cilantro, lemon and onions in to a bowl and mix very well then refrigerate.

7- Sautee the peppers and the onions in a pan and put away

8-Reheat the beans on the stove or in the microwave and put away

9- Wash the rice under cold water

10- Add the rice, the vegetable oil and let it cook for two mins.

11- Add the water and salt and let it boil in the pot then turn the heat down and let it simmer until the rice is tender and cooked ( about 15 mins)

12- Add the chopped cilantro and the lime juice and stir well

13- Now you can make your own burrito bowl at home :)
