Summer Rolls/ Rice Paper Rolls

Here is what you will need:

Rice paper

Vermicelli rice noodles

Cooked shrimp (peeled and deveined)

Cucumbers

Cilantro

Bean sprouts

Avocado

Carrots

Butterhead Lettuce

a small bowl filled with water

cooking brush


Directions:

For making SHRIMP SUMMER ROLLS

1- Start off by thawing out your cooked shrimp from the freezer

2- Cook the vermicelli rice noodles according to their packet

3- Slice the shrimp in to two halves when they are completely thawed out

4-Slice the cucumbers into long strips

5- Wash the lettuce and separate it

6- Wash and pick out the cilantro leaves

7-Wash the bean sprouts

8- Place the rice paper on a cutting board. Using a cooking brush, brush it with a little bit of water on both sides

9-Place the Lettuce, then rice noodles, then a little bit of the bean sprouts, then a couple slices of the cucumbers, the cilantro then the shrimp

10- Pull the rice paper to cover everything, then keep rolling firmly to cover the shrimp.

11- It can be served with peanut dipping sauce


For making VEGGIE SUMMER ROLLS

1- Cook the vermicelli rice noodles according to their packet

2-Slice the cucumbers into long strips

3- Wash the lettuce and separate it

4- Wash and pick out the cilantro leaves

5-Slice the carrots into long strips

6-Slice the avocado in to thin slices

7- Place the rice paper on a cutting board. Using a cooking brush, brush it with a little bit of water on both sides

8-Place the Lettuce, then rice noodles, then a couple slices of the cucumbers and carrots, the cilantro then avocado slices

9- Pull the rice paper to cover everything, then keep rolling firmly to cover the avocado.

10- It can be served with peanut dipping sauce


Peanut Dipping Sauce

1/2 cup creamy peanut butter

1-2 Tbsp. gluten-free tamari or gluten free soy sauce

1 tsp sriracha (or more if you like it really spicy)

2 Tbsp. lime juice

1/4 cup water

1 tsp garlic powder

Peanuts


-Place all of the ingredients in to a bowl and whisk until they are combined

-Top with crushed peanuts
