Here is what I used:
Crust:
2/3 cup Coconut flour
3 Tbs Maple syrup
1/3 cup veg oil or coconut oil- room temp
*I like a thicker crust so I just doubled the ingredients for the crust*
Caramel:
1/3 cup maple syrup
1/2 cup creamy peanut butter
1/3 cup vegetable oil or coconut oil
1 tsp vanilla
Chocolate:
50-50 ratio semi sweet chocolate chips and dark chocolate (I used Enjoy life foods).
About 1/2 cup total (1/4 cup semi- sweet + 1/4 cup dark chocolate)
Directions:

1- Preheat oven to 350 F
2- Spray the pan with non stick oil spray
3- Mix all the crust ingredients together in a bowl and add in your baking pan.
4- Bake for 10 mins or until they are golden brown. Let them cool down

5- Mix your caramel ingredients together in a glass bowl and microwave for a min to become really smooth and add to your cups. Put them in the fridge for an hour

6- Microwave your chocolate and add them on top
7- Put them in the fridge for an hour also
Enjoy!
