Here is what you will need:
One box of Any Gluten free pasta ( I used Red lentil pasta)
1 block of vegan/ dairy free Feta cheese (I used the Violife brand)
Fresh Basil leaves
Olive oil
Salt and pepper to taste
Oregano to taste
Mushrooms (optional)
Cherry tomatoes
Garlic powder to taste
Red pepper flakes (optional)
Directions:
1-Preheat oven to 400°F
2-Add olive oil to a baking dish and toss with whole cherry tomatoes, salt and pepper until everything is coated. Add the feta in the middle and top with a splash more of olive oil, salt, pepper, garlic powder and oregano.
3-Bake for 25 minutes or when the tomatoes are well roasted.
4-Meanwhile, cook your pasta according to directions then strain.
5- Mushrooms are optional, but I sauté some mushrooms in a pan separately to add later to my pasta
5- Remove the baking dish from the oven and add pasta and mushrooms and mix very well
6- Add the Basil leaves and red pepper flakes
