Homemade Tabbouleh (with Quinoa)

Here is what you will need:

2-3 big tomatoes

1 medium onion

Lemon juice to taste

Cinnamon

Salt to taste

Quinoa

Parsley

Olive oil

Fresh mint leaves


Directions:

1-Cook Quinoa according to instructions on package. If you love a lot of quinoa then feel free to add it as much as you like to your salad.

2- Finely dice the tomatoes and onion. Add a little bit of cinnamon to the onions

3- Take the parsley leaves off of the stems and finely chop them or blend them in a food processor

4- Wash parsley after chopping them many times to remove all the dirt from them and add some paper towels to soak up all the water after draining them

5- Finely chop the mint

5- Add parsley, tomatoes and onions in a bowl with the quinoa and mint

6- Add lemon juice, salt, pepper and olive oil to taste and mix well

7- Tastes really good after refrigerating
